Esta es la primera vez que participo en este evento y he estado leyendo los resúmenes previos. No he encontrado, hasta ahora alguna participación de mexicanos aquí; así que yo seré el primero

México a través de su historia ha tenido influencia de muchas culturas y cada una de ellas ha aportado algo a la actual cocina mexicana. Una de esas culturas fue la inglesa que en tiempo de la colonia se establecieron en el estado de Hidalgo para explotar las minas. El único platillo que dejaron los ingleses y que se arraigó en la comida típica del dicho estado fueron precisamente los "PASTES" con algunas variaciones producto del mestizaje. ¿Cual será la receta original?, la respuesta no la se; solo les puedo decir que mi abuelo era oriundo de la ciudad de Pachuca, Hgo. y la receta que a continuación les presento mi mamá las hace así desde hace muchos años.

Ingredientes:
1 kg. de pasta de hojaldre
1½ kg. de filete de res en cubitos
1 kg. de papa en cubitos
2 cebollas grandes picadas
2 poros grandes, únicamente lo blanco
3 dientes de ajo molido
chiles serranos picados
1 taza de cilantro picado
sal y pimienta negra recién molida
1 cucharada de fécula de maíz

Preparación:
En un recipiente se revuelven todos los ingredientes y queda lista para rellenar los pastes. La pasta de hojaldre se extiende y se cortan cuadros o cilindros para hacer empanadas, se rellenan, se sellan las orillas y se tapan. Se untan de huevo y se hacen unos cortes pequeños encima. Se hornean a 350º F. hasta que doren. También se puede hacer y muy cómodamente en forma de strudle.

Mexico, throughout its history, has been influenced by many different cultures and each one of them has given something to contemporary Mexican cuisine. One of those many cultures was the English culture, who in times of the Spanish colony established itself in Hidalgo to work in the mines. The only food that the English brought and that became a part of the typical cuisine of said state were the “pastis”. Of course with some variations due to “mestizaje”. “Which is the original recipe?” some ask. I do not know the answer, all that I can say is that my grandfather was from the city of Pachuca in Hidalgo and he gave my mother the recipe that I am about to give you, and she has been cooking this recipe for decades.

Ingredients:

1 kg of puff pastry
1 kg of beef steak, cubed
1 kg of potatoes, cubed
2 large onions, chopped
2 large leeks, chopped (only the white part)
3 garlic cloves, ground
Chopped serrano chilis
1 cup of chopped coriander
Salt and freshly ground black pepper
1 tablespoon of cornstarch

In a container, mix all the ingredients together, that will be the filling. Spread the puff pastry and then cut squares or circles to make empanadas. Fill them, seal them with a fork. Smear them with scrambled eggs. Make some incisions on the top so that it can breathe. Bake to 350 degrees Fahrenheit until golden. You can also very comfortably bake like a strudel.

Yo tengo mi receta de PASTES del Estado de Hidalgo. El relleno coincido, pero la masa para hacer las empanadas no es de hojaldre, sino de masa para empanadas sencilla.

Imagino que en hojaldre son mucho más ricas.
